Baked feta with cherry tomatoes, thyme and olive oil
Baked feta with cherry tomatoes, thyme and olive oil is a simple Mediterranean dish where tangy cheese softens in the oven alongside sweet tomatoes and aromatic thyme, all melded by high-quality extra virgin olive oil.

Feta and tomatoes come together in a shallow baking dish with fresh thyme and olive oil, transporting the classic flavours of Crete’s late summer into the heart of any home kitchen.
Ingredients
- 200g feta cheese (in one block)
- 300g cherry tomatoes, halved
- 4 tbsp SPHERA extra virgin olive oil
- 6 sprigs fresh thyme
- 1 small red onion, thinly sliced
- 1 garlic clove, finely sliced
- 1/4 tsp freshly ground black pepper
Method
- Preheat the oven to 200°C (fan 180°C).
- Place the feta block in the centre of a small ovenproof dish.
- Scatter the cherry tomatoes, red onion, and garlic evenly around the feta.
- Drizzle everything with the olive oil and scatter the thyme sprigs over the top.
- Season with black pepper.
- Bake for 25 minutes, until the tomatoes are soft and jammy and the feta has just begun to brown at the edges. Serve warm with crusty bread.
SPHERA tip: Try adding a few Kalamata olives for extra savoury depth, or use mixed heritage tomatoes for colour.
