23 Aug Grilled peaches with feta, basil and olive oil
Juicy grilled peaches paired with tangy feta, fragrant basil, and a generous drizzle of SPHERA olive oil make for an easy, elegant summer dish. Perfect as a starter or light lunch.
Fresh peaches are abundant on Crete and throughout the Mediterranean in summer. Grilling brings out their natural sweetness and pairs beautifully with salty feta, basil, and a generous pour of good olive oil.
Ingredients
- 4 ripe peaches, halved and pitted
- 120g feta cheese, crumbled
- 2 tbsp SPHERA extra virgin olive oil, plus more to serve
- 1 small handful fresh basil leaves
- Freshly ground black pepper
- 1 tsp runny honey (optional)
Method
- Preheat a grill pan or barbecue to medium-high heat.
- Brush the cut sides of the peach halves lightly with 2 tbsp olive oil.
- Place peaches cut side down on the hot grill and cook for about 3 minutes, until grill marks appear. Flip and cook a further 2-3 minutes until just softened.
- Arrange the grilled peaches cut side up on a serving plate. Scatter over the crumbled feta and torn basil leaves.
- Drizzle with a little extra olive oil and, if liked, a teaspoon of runny honey.
- Season with freshly ground black pepper and serve warm or at room temperature.
SPHERA tip: This is best made with peaches that are ripe but still firm, so they hold their shape on the grill. Try adding a handful of rocket or toasted walnuts for more texture.
